Chef and owner Chad Scothorn has earned praise for his use of fresh ingredients and farm-to-table approach. Preparation changes depending on the season, but entree choices typically include fish, chicken, beef, duck and Colorado lamb. Scothorn has been praised by The New York Times, Nation's Restaurant News, Snow Country, Esquire, Bon Appetit, Connoisseur and Town and Country for his creative approach to food. The COSMOpolitan is listed in the Zagat guide and has earned the Award of Excellence from Wine Spectator every year since 1998.
Assorted appetizers are available but make room for the shrimp and calamari and the chopped salad. Both are menu staples - and rightly so. The calamari and shrimp have just the right amount of coating and tangy sauce for dipping. The Cosmo has a unique take on the chopped salad, too. It arrives beautifully arranged on a plate divided into individual strips of choice ingredients including avocado, local arugula, house-smoked salmon, tomato, Israeli couscous, egg and corn. Feel free to toss it all together with the buttermilk dressing or design your own perfect bite.
The COSMOpolitan has established quite a dedicated following for happy hour (5 pm-6 pm), serving half-priced sushi, Cosmopolitan cocktails and house wines. If you can't score a spot during this coveted time, the bar does offer a $20 salmon or steak special, which is accompanied by a glass of wine. These offerings are only available in the bar area and lobby.
